GIF is a genuinely old image format, designed decades before modern video codecs, and it carries two hard limitations that no amount of clever conversion can fully avoid: a strict cap of 256 colors per frame and no built-in audio track. Every video-to-GIF conversion is really a negotiation between file size, motion smoothness, and visual quality within those constraints, which is why a badly-converted GIF looks blocky and banded while a well-converted one from the same source clip looks clean.
Trim first, always
The single biggest lever on both file size and quality is simply how much footage you're converting. A 3-second GIF at good settings can look sharp; a 30-second GIF at the same settings has to spread its limited color budget and frame count across ten times the content, forcing much harsher compromises elsewhere.
