Do I set the number of segments, or the length of each one?

You can specify either — set a target segment length and the tool calculates how many segments result, or set the number of segments directly.

Will the last segment be a different length than the others?

If the total duration doesn't divide evenly, the final segment absorbs the remainder and may be slightly shorter or longer than the rest.
